The table, a little later

Food as a gesture of hospitality, rather than a collection of fashionable addresses.

The most revealing part of a meal may not be on the plate. It may be the invitation, the extra chair, the conversation that grows less formal as the table clears. Food makes a city legible through habits as much as through headlines.

In this section we will ask about ingredients, working lives and the rituals of eating together. There is room for the everyday shop and the ambitious kitchen, for old habits and new arrivals. Neither nostalgia nor novelty should be allowed to do all the talking.

This introductory notebook does not award stars or claim a restaurant visit. Future features will distinguish a sourced introduction from a review, and a venue’s own description from our independent reporting. For now, the table is set for questions.
